Snow falls and summers are short in the northern parts of Japan. This geographical disadvantage puts a premium on rice that is grown in the region of Hokkaido. Nanatsuboshi rice creates the highest yield of rice in that region, but don’t discount the quality of what this rice brings. It’s certainly on. another level. Short grain, with excellent water retention. This rice is perfect for sushi and nigiri.
